Strawberry Cheesecake Cupcakes

Recipe story

Since my oldest boy Parka has a nut allergy, I have to be so careful what I give him, so I end up making everything myself, which is damn hard work. Anyway, one of the simplest things I make is cupcakes, and since both my son and I have a bit of a naughty sweet tooth, for treats and birthdays I select the very best kind, and the cheesecake recipe is one of them and always goes down well with the troops.

The Ingredients

  • 115g butter
  • 115g caster sugar
  • 2 free range eggs
  • 115g self raising flour
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk
  • TO DECORATE:
  • 175g white chocolate (chopped)
  • 175g cream cheese
  • 6 tablespoons creme fraiche
  • 1.5 teaspoons vanilla extract
  • 6 tablespoons sifted icing sugar
  • fresh strawberries

The Method

1. Preheat oven to 180 (350F), Gas 4 and line 12 muffin cases in tin

2. Beat butter and sugar together until fluffy and pale, then beat in eggs.

3. Sift flour into mixture and fold in, then add vanilla extract and milk.

4. Spoon into cases and bake for approx. 10 mins until risen and golden or skewer is clean, then cool on wire rack.

5. To decorate melt the choc. in heatproof bowl over a saucepan of simmering water, then cool.

6. Beat cream cheese, creme fraiche, vanilla extract and icing sugar together in seperate bowl and beat in melted chocolate.

7. Smooth cream cheese mixture over the cakes and chill for about 1.5 hours until set, then decorate with fresh strawberries, sliced or whole.

    Made these today - great cake recipe! (I just used plain icing with food colouring - I know, I know - all those additives but it's my daughter's party tomorrow and she wanted pastel fairy cakes!!).
    I'll have to upload my chocolate cake tomorrow.
