Pumpkin Fritters

Does anyone else remember pumpkin fritters?  One of our grandmothers used to make them and they bring back such happy childhood memories. We were really happy to find a recipe from our favourite South African foodie - Ina Paarman.

And it's perfect for those of you looking for something to do with all the carved our pumpkin!

The Ingredients

  • 2 cups (500ml) of cooked mashed pumpkin
  • 125 ml flour
  • 1 t baking powder
  • pinch of salt
  • 2 eggs
  • a litle milk if too stiff
  • oil/butter for frying
  • 1t cinnamon

The Method

1.  Mix the pumpkin, flour, baking powder and salt.

2. Mix with the eggs to form a batter of dropping consistency.

3. Fry spoonfuls in and oil'butter mixture until golden brown and done.

4. Drain on kitchen towel.

5. Mix the sugar and cinnamon and sprinkle over the fritters.

6. Serve hot with lemon slices
