Greek Chicken
Recipe story
This is a dish my mom used to make for us and as I love chicken (you might have noticed) I have been making this for years as it is easy and quick and of course yummy!!!
I don't have quantities so just work out how many pieces chicken, potatoes, onions every person will eat.
The Ingredients
- Chicken pieces drumbsticks and thighs work well
- Potatoes peeled and cut roast potato size
- Onions if large cut them in half
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- lots of freh garlic crushed (4cloves at least)
- spices (salt, pepper, orany spice mix that you like Lemon pepper also works well)
The Method
Place chicken, potatoes and onions in a dish large enough to fit all pieces next to eachother.
Mix oil, lemon juice, garlic and spices and pour over chicken etc
Place in preheated oven (180 C) and bake for approx 1 hour.
You can baste once or twice if you feel you have to.
Serve with fresh baguette and tzatziki best home made (grate a cucumber, squeeze out liquid, add greek youghurt, garlic salt and pepper and enjoy)
