Delicious Fish Pie

Recipe story

Fish is so good for you and can be such a yummy dish if cooked right. This recipe will definitely tickle your taste buds and serves from between 4-6 portions.

The Ingredients

  • 25g butter
  • 4 shallots
  • 250ml dry white wine
  • 500ml fish stock
  • 800g haddock
  • seafood selection from tescos (optional)
  • 400ml milk
  • 150ml double cream
  • handful of shredded cheddar cheese (optional)
  • pinch saffron
  • lemon pepper and sea salt
  • juice of 1/2 lemon
  • handful of tarrgon and parsley
  • 6 large potatoes
  • butter

The Method

Heat the butter in a pan and heat the shallots until soft not brown. Then add the wine and let it simmer until its reduced by half. Then add the fish stock and again reduce by half.

Meanwhile take the chopped pealed potatoes and boil into a pan until cooked. Once cooked , mash the potatoes with some butter and season with some lemon pepper and sea salt according to taste.

Then take the haddock and remove any bones. Place the haddock,plus the seafood selection (optional) into the bowl , add the herbs (tarragon and parsely) plus lemon juice and mix well. Then add this to the pan with the milk, cream and saffron. then boil until reduce to a sauce like consistency. Then season with lemon peooer and salt. Then transfer this into an oven baking dish.

Then take the potatoe mash and spread this on top of the fish sauce, and add some chedder cheese on top according to taste (optional).

Then place this into the oven at gas mark 7 until it cooked nice and brown.
