Baked Whole Fish

I made this yesterday for friends and it went down really well. It's one of those dishes that never fails to impress but is so easy to prepare. (I forgot to take a pic but will do so next time).

The Ingredients

  • Whole fish (Sea Bass, Red Snapper, Salmon)
  • Two bulbs of fennel (sliced)
  • Pitted Green Olives (about half a jar)
  • 6 to 7 ripe tomatoes (sliced)
  • 2 Lemons (sliced)
  • A bunch of flat leaf parsley roughly chopped
  • Sea Salt and Black Pepper
  • Olive Oil

The Method

1. Toss the fennel, olives, tomatoes, lemons and parsley in about 3 tablespoons of olive oil

2. Season the fish and pour over a little olive oil (about 1 to 2 tablespoons, depending on the size of the fish)

3. Place as much of the salad/herb/lemon mixture inside the fish and then just put the rest all around and under the fish.

4. Bake is a pre-heated oven (200 degrees C) for about 45 minutes (leave to stand for 5 minutes before eating)

5. That's it!

    That sounds really good! Do you wrap the fish in foil or anything? And when you say pour over olive oil, is that the inside or outside? Sorry if these are dumb questions!!

    Not dumb at all. You don't use any foil and, if you are happy to use your hands, you can rub oil all over the fish. But otherwise just drizzle it over the top (your really don't need much as the fish stays moist in the skin) . But there is also a little olive oil coating the fennel, etc. so it not really necessary.
